Die ersten Spuren des weissen Nougats finden sich in der griechisch-römischen und arabisch-orientalischen Antike. Im gesamten Mittelmeerraum bereiteten die "Frauen des Südens" diese delikate Süssspeise mit Mandeln, Honig und diversen Gewürzen zu. Südländische Sensualität findet darin ihren Ausdruck.&lt;BR&gt;
&lt;BR&gt;
In Griechenland wurde die Köstlichkeit mit Haselnüssen bereichert und ohne Gewürze zubereitet. Diese Gaumenfreude wurde als NUX GATUM, der Kuchen aus Nüssen, bezeichnet. Die Herstellung des NUX GATUM ist in Spanien und Frankreich seit dem 16. Jahrhundert belegt.&lt;BR&gt;
&lt;BR&gt;
Im 17. Jahrhundert importierte Olivier de Serre von Asien Mandelbäume, die die von einer Krankheit befallenen Haselnussbäume ersetzen sollten. Die Plantagen wurden um die südfranzösische Stadt Montélimar herum angelegt. &lt;BR&gt;
&lt;BR&gt;
Dies war der Beginn des weltberühmten "Nougats von Montélimar"... Dem "Nugo" - wie das Nougat in der provenzalischen Sprache genannt wurde - wurde schliesslich im Jahre 1650 erstmals Eischaum hinzugefügt, um der Masse Volumen und Leichtigkeit zu verleihen. Heute besteht das Nougat de Montélimar aus Wasser, Lavendelhonig, Eischnee, gerösteten Mandeln, Pistazien, Zucker und Glikosesirup. Nur dieses Nougat darf das Gütesiegel Appellation d'Origine Contrôlée (AOC) und den Namen Nougat de Montélimar tragen.&lt;BR&gt;
